1 large potato
1 Japanese cucumber, cut into small cubes
1/2 medium carrot, cut into small cubes
1/2 apple, cut into small cubes
2 large hard-boiled eggs, cut into small chunks
1/2 Tbs. of butter
salt to taste
1. Boil the potato and mix with butter to make mashed potato.
2. Cook the carrot in boiled water for 2 minutes. Season with salt and let it cool. Rinse the apple cubes in cold salty water and pat dry.
3. Put the mashed potato, cucumber, carrot, and egg in a large salad bowl. Add salt to taste, if you prefer.
4. Put the salad in the fridge so it is nice and cold. Add mayonnaise just before serving.
Add mayonnaise to as much salad as you can finish in a meal. Put the rest in an air-tight container and store it in the fridge to keep it fresh for up to 2 days.
