Potato Salad

Ingredients:

clam1 large potato
clam1 Japanese cucumber, cut into small cubes
clam1/2 medium carrot, cut into small cubes
clam1/2 apple, cut into small cubes
clam2 large hard-boiled eggs, cut into small chunks
clam1/2 Tbs. of butter
clamsalt to taste
clammayonnaise

How to:

1. Boil the potato and mix with butter to make mashed potato. 
2. Cook the carrot in boiled water for 2 minutes.  Season with salt and let it cool.  Rinse the apple cubes in cold salty water and pat dry.  
3. Put the mashed potato, cucumber, carrot, and egg in a large salad bowl.  Add salt to taste, if you prefer.
4. Put the salad in the fridge so it is nice and cold.  Add mayonnaise just before serving.

clam Add mayonnaise to as much salad as you can finish in a meal.  Put the rest in an air-tight container and store it in the fridge to keep it fresh for up to 2 days.
